Sooooo, these are the ones I would like, however, there is a scoop type thing built into the eng case guard on my '01 IS that would preclude them being mounted like this - is that little scoop just on IS's? or maybe specific years? 'really not fussy on the look when the clamshell clamps are mounted on the round part

Yup, that air scoop is Interstates only...

Not sure if it's "safe" to do it, but lots of folks Dremel it off... I did on my Interstates...

I just cut the scoops off on my Interstate to use the lower engine guard to mount my Hwy pegs.

The purpose of the scoops has never been satisfactorily explained; and they are completely unnecessary.

My Hwy pegs are identical to yours, except I have Kury Dually pegs not Iso wings on the offsets.  

Beware that if you ride those pegs in twisty leans they can touch the road (depending on how they're mounted).

You want those offsets near the valve covers, but obviously not touching them.  

The idea is to cut the scoops off without damaging the guards.  The scoop weld bead to the guards is quite robust and if you go after it when cutting off the guards initially, you can cut into the guards doing it.  Better to cut the scoops off first, then go after the weld bead carefully.  That weld bead was tall enough to interfere with proper placement of my Hwy peg clamps, and I had to do quite a bit of careful grinding and filing to knock it off.  The resulting damage is way down low and only visible from the ground.  You may want to paint it with clear nail polish (or something) to inhibit future corrosion.  

I cut mine off with a cheaper Harbor Freight 110 Volt grinder/cut wheel.  You need eye protection with that thing, and it puts off enough fiery sparks to set you (or your beard) on fire.

Not a good idea.  The Interstate guards also help mount the pods.

I think the consensus from previous discussions is that the scoops are there to help direct rain and road debris towards your boots.

For what it's worth you should try mounting the pegs before cutting on the hardware.  I have mounted those on the rounded parts of my Interstates' engine guards and they can also be mounted further back than where the scoops would interfere.

Not a bad idea but... keeping the hardware tucked in (underneath) is better than outboard of the guard curves (the bike is already fat enough, clearance-wise).  And behind the scoops means more bent knee, so in trial runs get on the bike for "feel." (no kidding)

I run Cobra floorboards and have more room to move my feet around on them than just pegs.  But I still like my Hwy pegs.

One of my interstates came with the scoops cut off and the same Kury Hwy pegs on it, and this fits me so well I just copied it on my 2d interstate.  (5'9", 29.5" inseam)

Just one question, I realize you've found what you like but, did you look at Mick O Pegs?
I don't believe these are still being produced for our Valkyries but, there are used ones that show up for sale now and then.

I consider my Mick O Pegs the best thing I ever added to my Valkyrie(s).   Only have one set and would love to find another set for my Fat Ladies Sisters.   The most comfortable highway pegs I've ever used for my knees.

Mine came with the Kury setup with Dually's. BFU IMO.
I liked the 1" clamping area for mine but seeing it can still puncture my valve cover in event of a drop etc., nah. I do prop my feet on top of the heads for a stretch or take a break as usually its about fuel time.
