i ve been looking for boudain noir , or red boudain or blood sausage for a while now. no luck in H town. fiesta market sold it a few years back under the spanish name of cerilla (from argentina).
boudain rouge is old type people in L A use to make before they switched to rice.i hope to find an exact recipe soon and make some.
the pig blood is available at the viet hoa market.I remember as a kid watching a neighbor behead a chicken ,collect the blood and throw it in a skillet with bread , onions and herbs to make boudain noir,can still smell it----
