Bought a new meat slicer!!!!!!..... that means at the next BQ.... I get ta spent more time visiting... and less time cutting BBQ!!!!!!!...  12 " slicer..should run through 25 or so briskets pretty quick!!!!!..gonna try it out toinight..... after the briskets are done ..  We were out of BBQ... ya know that can't be right!!!!....Had ta cook some!!!!!!!
  Lookin forward ta using the new slicer!!!! I had one before... but it gave up the ghost 12 years ago....but it was new in 1952....

I smoked some brisket and it was delicious, but the leftovers ended up kinda dry.
When I fire up the smoker we fill it up, and eat great for weeks, the ribs and butts are great warmed up  but any of the beef we do ends up pretty dry on the second go round. any tips?

Vaccum pack the brisket...in bags small enough to fit in a pot of boiling water....when heated cut bag and the meat will be moist....

We have a vacuum packer, we don't use it as much as we used to. But that sounds like a great idea.

Bought a Tor Rey 12 " slicer.... have had one of their meat Grinders for several years..... nice equipment....The slicer worked great this weekend...... and I have never bogged down the grinder..... and I have pushed a LOT of meat through it!!!!!!!   Hope the slicer works out as well!!!!
