Would like to take off the cam end cover and polish them. Will they leak if put back on after polishing?

They shouldn't - just make sure the gasket is intact when you put it back on.
Should be good-to-go.

I have changed mine and just be careful and try to save the gasket. Oil won't come pouring out when you take it off either.

casabroker....take off the covers, and carefully remove the black rubber gaskets (you will be putting them back on.)...lay the covers on a towel, and take some 0000 steel wool dipped in some mineral spirts, and you can rub what is left of hond's protective coating off.....take some good metal polish and you will have them looking like chrome in no time. put the gaskets on...it won't leak.
