Straight to a Valk may be too much but a Valk is not too much for a woman once the basics are learned. The MSF couse would be a great start.
Kim took the 750 Shadow route as well before mastering the Valkyrie. She put about 17K miles on the Shadow including a nice long trip to the Keys before the Valk came along.

One day she asked if she could ride the Valk so we went out to the K-Mart parking lot {'cause it's always empty} & she did pretty good.
Then I bought the Rocket 3 thinking it would replace my Valk. After some shorter rides we took another trip to the Keys with me on the R3 & Kim on my Valk.
Learned two things on that trip... 1- The Rocket was not going to replace my Valk & 2- If I wanted my Valk back I was going to have to buy her a Valk of her own!

Soooo, her uncle had a nice low mile '98 Tourer for sale & now it's all hers.

Moral of the story, keep the Valk & give the Misses a chance!
