any suggestions as to techniques that are best for this job?  its a bugger with big hands to get in there and stretch it back on.

A little WD40 on the lip of the boot, and spin it on.  Start one side of the boot and rotate it.  The rest of the boot will do on.  It has worked good for me the last couple of times I have had to put it back on.

I warm it up so its 'soft' and add some lube. I use pliers on the tabs. Once one end is started, I just spin it. Helps if the swing arm is near level.

Rubbing alcohol is the best lube for rubber. It will slide right on.

Wait until you get the bike back on the side stand. The shaft angle will be in it's normal position and the jack being out of the way will give you more room to work. This has worked well for me in the past. Also knowing the correct words will help.

I recently inspected my u-joint for the first time and it took me a couple days to get the boot back on- what worked for me was getting it at ground level as mentioned below, and the other life saver provided by some saint on this tech board:  fold/roll the large end back on itself and then snug it up and unroll it over the opening...  this is how i was able to get it back on.
