Course... I'm from The Republic of Texas..... we cook brisket here....  18 to 20 hours on the pit..... Hmmm Hmmmm Hmmmm...
They do it different in other parts of the US...

Dry rub, no sauce....  low and slow....  225 to 250 degrees ..woodfire..oak and pecan....12hours minimum to 20 hours..... of course, ya have to marinate the cook... coolsmiley

  Some of  best I ever had.  Randy's BBQ  New Boston Texas.  North east Texas. In the area where Ark  Ok, and Texas come together.  Wife and I were on vacation. Somewhere in central Arkansas got up one morning as we were planning our day I ask her where she wanted to go0 for lunch.  her reply  Texas.  we found Randy's after a ride threw Oklahoma and Arkansas.

  So I vote  Texas!! for best.

Not looking good for making it.  Have planned on it since last year, I enjoyed it so much.  But, with the early spring here, field work is starting, and I have to go to work.  Cry Cry

when i left Texas and went to Mo i got the first taste of pork from the pit i ever had..I spit that stuff out quicker than a hic-up..took it back to the counter and told them something is wrong here, taste funky,,,got another one,,uck!!!!
where i come from pork is for breakfast and beef is for lunch and supper...then i came to Tn. and they put,,now get this! COLESLAW on their sandwitches and hot dogs,,,,UCK!!!!!

Born and raised in Texas, but live in Pittsburgh now.  Not only do they not know how to do 'Q here, and they put cole slaw on the sandwich, but they also put FRIES on them too!!

I'd settle for a heap of brisket beside a stack of sausage, a couple of pieces of Mrs. Baird's and some pickles and onions to go along with it. Mmmmmmmmmm.

i like central Ill. BBQ, along with Missori's.  best i ever had was by the quad cities, Davenport IA, some run down place along the highway.  those were good!!  (wish i could remember the name of the place!!)

I ordered the briskets last Friday!
will be cooking 24 of 'em.  Last year I ran out of chickens... so this year will doubledown on the yardbirds and sausage cooldude
  Will need to cook some of them onn a buddy's pit cause I just don't have room on mine for more than 15 chickens.... guess I shoulda built a bigger pit...LOL  coolsmiley
  My buddy is bringing his pit over this morning so I can do some welding on it.... the stack is not big enough to draw right... so I will put a bigger one on it, then have it here to burn some chickens!!!! Grin
  Can't Wait!!!!!!  Y'all travel SAFE getting here!!!!!

As for Q, my boss enters those bbq cooking contest all over and does fair.  He may even be on a cooking show this Fall if all goes as planned.  Those tv folks sure make you jump thru hoops.
I never tried to smoke brisket.  I know fo sure it wouldn't be as good as Mark's so why try.  Mark's bbq is the only tripp I make definitive plans to attend.  Not a finer host and hostess, nor finer folks attending anywhere.
Staying at HoJo's Friday and Saturday nite.  My trip mood will decide where I stay Thursday nite.
