 Trying my hand at eggplant humus and needed info on how to cook it before adding it to my humus. found this great website and thought I would share it. no affiliation yada yada.

Try slicing it thin and lightly seasoning it after putting a little, a very little olive oil on it and then roasting it in the oven. Once done and cool cut it into ribbon thin strips and then cut it again into fine cubes. Can add some to the food processor and save some to mix in for texture. Cool and enjoy.

 Thanks for the suggestions. I went with the oven roasting on thyme sprigs this time. Delicious!  cooldude Folded one half into some of my homemade garlic humus and that was terrific as well.
Maybe some  Baba ghanoush with what I have left.  Smiley
