I've used MemoriesOnTv, by CodeJam.com, for my picture/slide/video clip needs. I like it because it's easy to use and still gives me a quality end product. It's free to try but it puts a watermark on your output until you pay 'em their $59. The output can be DVD's or web sized videos that can be put on youtube and the like. You can download a trial version here: http://download.cnet.com/MemoriesOnTV/3000-12511_4-10134414.html. There are probably other cheaper or free alternatives out there but I like working with this program.

Windows Movie Maker works OK...

The big deal with video editing is - you need a studly computer with lots
of memory or it is sooo slowwwww....

And then, after you get your video edited, you'll want a decent Internet
connection to upload it on, or else there's more waiting...

I just put my gopro on "take a picture every 5 seconds" and root through
the pile when I get back from the ride... it is easy to upload a handful of pictures...

Windows Movie Maker OK for me also.  Have to play around with it to learn how to use it but can add music, pick sections of video to include, add text to different portions, etc.

Windows Movie Maker is pretty easy to use and best of all its free. If you want something a bit more sophisticated then have a look at Adobe Premiere Elements there is a 30 day free trial download and IIRC it is about $100 to buy. If money is no object then take a look at Adobe's Premiere Pro or Sony's Vegas Movie Studio as they are well rated. Loads of computer memory and a big hard disk as well as a meaty processor are required and be prepared to leave your machine on over night whilst it does its thing.
