Two items I know I will want to add are a gps mount and a 12v adapter to allow me to plug in a phone or iPad charger. 

What is the best way to wire these into the Valk?

just plug into the accessory hookups.  5A keyed circuit should handle what you said you wan it for.  Under the right side cover.  Look for the two unused wires in a plastic proctector (tube thinggy)  Be careful removing the side cover its easy to break the tabs.  It doesnt open like a door

Use the accessory leads to trigger a Relay to feed an add on fuse block of your preference.  Then add accessories to that.  Best and safest way to do it.
