It may sound crazy, but I am actually looking forward to some wrench time with my bike. She was acquired last year and hasn't been running as smoothly as I know the engine does in perfect order. The weather is beautiful out here now, but if I don't take a break from riding now to tackle a couple projects and replace a few things while shes apart, I never will. My to do list when the carb bank is pulled:

Keihin jets in 38 slows
Red-eye carb bowl gaskets
Red-eye pilot screw washer and gaskets
I/S vacuum springs
K&N air filter
Red-eye intake manifolds gaskets
XF6's desmog kit
Silicone 3.5mm vacuum hose
Red-eyes vacuum caps x5

So my questions to you all, is there any other projects or replacement parts that I should consider while the bike is out of commission? She is sitting pretty at 25K miles, but somewhat new to me and doubtful that the high mileage maintenance was followed.

You guys are great here on VRCC and am happy to now be part of such a group! Cheers and thanks for any ideas and help!

P.S. - anybody in AZ have a manometer or vacuum setup for carb sync?

Just for your general information....polishing the intakes has turned out to be a waste of time.  Didn't accomplish what was hoped for by those that did it, probably actually cut power a bit due to the smooth surface.

A couple things.
Like John mentioned, the intakes. I too don't think polishing helps, but, cleaning them up some does. They are pretty rough and just smoothing them a bit makes you feel better.
Regarding changing the jets, why 105s ?  These monsters tend to run a bit rich with the original 100s.

If you have stock pipes or glaspaks, then the 105 mains are too big.  If you have Cobra 6x6, then OK but you'll also need to get the needle kit too.

Polishing the intakes is a waste of time and effort.  If you go too far you will do more harm than good.

Oh boy, that's a potential IED waiting right there.

I would suggest that all that is not needed and can lead to disaster real fast, not to mention the expense.

Only after trying all the non invasive remedies and a good synchronization would that be the possibly suggested course of action.

But, to each his own!

Thanks for the info about the intakes, scratched that idea.

I also will be scratching 105s, the bike has the Two Brothers 6x6 exhaust but if they are too rich for glasspacks I doubt I will install them as I want to pickup a stock or MarkT set of exhaust as well.

Ricky, I did a long search through the forum for troubleshooting several of my problems, worked on a couple but not all!

Thanks for feedback!
