I was just thinking to have a good cover for my Valkyrie (I have saddlebags and honda windshield). Do you know a good one... and which size?

exigent covers. there is no subsitute.. i believe this one would work.

i have their full rain cover plus their half cover.
also have their boot covers. everything is very well made and guarrenteed.
they also make trailer covers but you have to purchase them threw a trailer dealer.

They pack small and take little room in your saddlebag.  IMHO, they are THE best bike cover you can buy. 

You can see my Valk in my sig pick (the after pic) below.  I have the Wonderer X.  It's a full cover that covers my Valk that has a Woody's fairing with 11" shield, saddlebags and trunk perfectly.

I have one from tour king. They are from TX and I bought 3 from them. Its a half cover that rolls small in a bag. It always stays in the bag. They make them for the Valk. Big trips I have a Dowco 100% waterproof also.
