see that my overflow tank seems to be empty

How much distilled water can I put in there before lowering the effectiveness of the honda premix and can I mix brands.

Will look for premix at the kawasaki dealer tomorrow and get a bottle to be on safe side

Would hate to have a problem on a 16 day ride as each day is around 550-660 miles

You could buy silicate free anti freeze and top up the reservoir.

Honda says a 40% minimum is required for corrosion protection. Shouldn't be any issue to top it up once or twice. After that, find the leak.

If the coolant overflow tank is empty, then the radiator can also be low.....check it..

When a tad low, I add pure antifreeze.

If lower it is best to add a premix of 50/50, which can be purchased.

If you think you have a leak, put some antifreeze in a 16 oz. soda bottle and take it with you. Be sure to put a skull and crossbones on the bottle, and label it antifreeze.

Like Chris said, the Prestone pre-mix they sell at places like Wal Mart for about $10/gal should be fine.  You should check the label to be sure, but just about all coolants are now the organic acid type without silicates, which is what the Valk needs.  When our Valks were new silicate-free choices were limited, but no longer.

Beck/Arnley Premium OE Antifreeze/Coolant utilizes Phosphated Organic Acid Technology also known as Hybrid Organic Acid Technology (HOAT) and contains no amines or borates and is free of silicates that may harm water pump  seals and cause gel formation which may clog the radiator. MIX WITH EQUAL PARTS DISTILLED WATER.
