Just "inherited" a '97 standard that's been sitting for a couple years and needs a good carb cleaning.  I plan to add some Supertrapp's in the future and was going to replace the LS jets with 38's.  I'll probably desmog it as well for preventative maintenance reasons.

Anything in the carbs or otherwise I should do while it's apart?

Desmog as you said.  Replace the small hoses on the side of each carb that goes to the cut valve.  Replace the hose to #6 that operates the petcock if you still use the OEM petcock.  Replace the intake O-rings.  I had petcock trouble a couple of times and finally relented and bought the non vacuum Pingle and replaced the petcock.  Be sure you tighten all the band clamps on the intake tubes.  If you go to the larger slow jets set the pilot jets all to 1 3/4 turns out from the stop.  If you leave the OEM's in set them to 2 1/4.  Sync when all else is finished.
Easier to get the carb bank out if you remove the support brackets on the rear of the tank, this lets you move it back enough to slide out.  Seems like it comes out the left side easier.  Look in Shoptalk for Quexpress's how to on desmog.  It has pictures.

The ethanol in gas is hard on rubber. I would suggest replacing any o-rings and gaskets in the Carbs.

Yep, and check out d-ray smith's videos on youtube, he has some good pointers and tips. Pilot screws and o rings a big must be clean. Can get the pilot orings from redeye tech.

Might want to consider an electronic fuel shutoff valve while you have it torn down.
