I am almost positive that someone has put a 225 on the rear of their Valk. I currently am running a 200 Avon MT and I have about 1.25" of clearance on the brake side and about .25" on the shaft side. I know the swingarm will need to be notched and I have an extra to use.
Thanks in advance and pictures if possible!

I've seen 240, even 300 in pics of radical customs. The ones I've seen over 205 all had modified the swingarm/drive shaft assembly.  Not trivial.  I believe the ultra wide tire fad is pretty much over anyway.  Not to mention it impacts handling with excessive countersteer required.  And the tires are expensive, with the fad ending soon to be unobtanium.  My observations, along with $5 that will get ya a capuccino.

Were u thinking car tire or bike tire? Im assuming car. I know attic rat pulled a 215 ct off one of his bikes with no swing arm mods but no way would it fit on mine. I have searched for a 215 or 225 bike tire but nobody makes it for a 16 inch rim. I still like a nice meaty tire on the back of a bike. I'd rock up to a 240 if it would fit, 300 no. I certainly couldnt tell any difference between the 180 and the 200 on mine and I'm certain I push it harder through the turns than most.
