I find myself in need of a shop that will work on yesteryear metric classics. Hopefully somewhere not to far south of Gainesville.

Earl's Cycles on North 441 on the north side of Ocala. He is a total classic Japanese bike fanatic & has a huge Japanese bike salvage collection.
He's a little bit south of the Ford dealer on the west side of 441.

What kind of work do you need?  I'm not anywhere near there but I owned two XS1100s for a total of 26 years and might be able to diagnose something.

Had the bike in- Custom Accessories- in Chiefland for six months. The bike had sat for a long time, still has the original tires. He claimes he compleatly rebuilt the carbs, and put in new boots. Have had it home three times, but still have not made it out of the driveway. I can see no use in taking it back again. It starts, but it is really hard to keep it running. Any ideas???

It sounds like the carbs weren't set up correctly.  I would check the easy stuff first, like the lines for fuel and vacuum (there are a lot of them), and the screens on the petcocks.  If it isn't that I would look at the carbs.  Take them off and check the needles for correct position and look for holes in the diaphragms.  There is also the float heights to consider and carb sync too.
Good luck, I hope you get it running right, those bikes have a really good running engine.  They had the fastest 200 yard roll on from 50 mph in top gear when they were new, 81 mph IIRC.
