I am having a problem with the rear caliper should both piston come out when the brake pedal is pressed.and is the plastic cover on the rear res just a clip on don't want to break it if there is a trick to it.

I would say most definitely both pistons should come out---and evenly.
I don't have my valk  anymore but I think all resevoirs covers have small flathead screws holding them on.

Someone will correct me if I'm wrong about the rear brake one.

The plastic cover on the rear brake fluid reservoir is not just a clip on.

If your brakes are sticking like that, you need to remove the calipers,
pop out the pistons, clean it all up and put it back together with new seals...

When I first got the bike in the spring it needed brakes all around.  I did notice A LOT of resistance when pushing the pistons back into the caliper.  More than I would have expected.  Next brake pad change the calipers are coming off and I will clean and hone the cylinder bores put new seals in and and put them back together.  once the pistons begin to seize you are looking at trouble.

Don't forget to check the brake pedal pivot.  Those tend to corrode and contribute to a sticky rear brake.
