I'm not around my bike otherwise I'd just figure this out and not have to bother with a rather redundant post. Is it possible to remove the fairing completely and still ride the Interstate? Since my faring is toast and the only repair shop close to me involves a lovely trip into Atlanta, I was thinking of completely removing the faring and riding it without the plastic since it's broken to the repair shop.

Changing the connections to regular gauges is doable but costly and then you will need a bucket and headlight.  Doable again but a lot of work and costly.  I had two interstates, also I would ask the question in the 1500 board as this is the 1800 new Valk board.    Lastly I see used fairings all the time on eBad.
