Does anyone have a setup like this? What does it sound like? I have the cut piggies and stock tips, And I want to go to the Shorty style exhaust, but I don't want to the bike to sound crappy...

If it was me and I wanted to find out what it sounded like, I would remove my current tips and put a couple of bean cans sliced and diced to approximate the 5 1/4" tips. Just punch a couple of holes for mounting or use some hose clamps.

With the shorties I would cut the rear baffle off completely leaving the front baffle intact. That would give you the ability to slip the rear baffle in for the times you want it a little quieter. If you do that I would run a screw to the tire side [concealment] to hold the baffle in place utilizing its integral threaded receiver towards the baffles outflow end.
I would also convert to adjustable needles to control your mixture that would be offset by a single baffle. No need to rejet.
Otherwise it's just aesthetics with the shorty stacks. There won't be a discernible sound difference between those and what you have now if you nix the baffle flexibility idea.

My buddy has them on one of his Valks, he has no baffles. Mines the same way with longer pipes. His is louder. I'm going with even longer straight cuts to put the noise out the rear.
