what does a Valkyrie tune up consist of at 55k?--I got some new plugs and wires to install--the carbs were redone last year..Points?CDI?

Put new plugs and you're done.  Why the wires.  Not sure if any of us have replaced unless the resistor went out.  Run a can of seafoam or similar a couple of times a year and ride on.

I had an "84 corvette--some 10 years later I replaced the plug wires and got some 20hp back..guesstimated by my 1-2 shift and tire spin

Owners manual. Lists the things to do and when.

As for replacing "parts", wait until there is a problem.

Most have posted no improvement after changing the plugs. I put Iridium in instead. Good for 100K miles. 3x the cost of stock metal tips.

Motor oil at least once a year. Other oils every 2 years. 1/2 can of carb cleaner (any but Seafoam) every spring, and I try to fuel up with Esso with Techron as much as I can.
