You need to go on one of the Old Gold Wing boards, they have members that do that kind of stuff. Example: www.ngwclub.com

John is correct...you will certainly find folks that can rebuild your carbs. You will most likely have to ship them. I can say if you go over to ngwclub, check out https://ngwclub.com/forum/viewtopic.php?f=6&t=65300 This is a post for a member named robin1731. He is a very honest guy that does great work.

I believe the most regarded rebuild kits are those from Randakk. They will also accomplish the repairs: https://www.randakks.com/Menard's in Brentwood is popular place for Goldwing (and Valkyrie) service, While I have not used them I have seen several good reports and even sent a couple folks there who have been happy: http://www.menardmotorsports.com/home.htmlRocket Moto does Traxxion work on wings but I'm unsure if they do carbs: https://www.facebook.com/rocketmoto

On my 1200 project I got Randakk's kits and a couple other items from Honda, then rebuilt them myself. I also desmogged it while I was at it, got rid of all the excess plumbing under the housing. Bike ran smooth as silk, no backfiring or popping, ran like a scalded dog actually. My local granddaughter's husband bought it, loves it.

There's a chap named Pistol Pete that provides carb services. Everyone that frequents those GW boards raves about him..... http://www.oldwings.com/

Of course the famous Attic Rat is probably a fine choice as well if you want to ship them,

You also might want to include your location in your profile. Might get local help.
I used to frequent goldwingdocs.com . They have different sections for the different GL's. A lot of DIYs.
Paying someone will cost a lot, I think the GL1000 has 4 carbs too? You'd get a lot more doing the job yourself, and learn a lot too. Nice thing of the older GL's is there is less covering up the engine area, so that part should be easier.
The next question is, what is wrong?

Are you a GWRRA member?
If so...lots of resources there to help you out.
Also might want to look at Vintage Japanese Motorcycle Club.
