Very few companies still cater to the original Valkyrie. It's been out of production for years, and the market isn't worth it for them to produce parts specifically for us. Aftermarket wheels were produced, and show up on ebay every once in (a very long) while. Having wheels made is possible, if you've got deep pockets. I don't know of anyone making air ride rear shocks for the Valk, but give these guys a call and see what they can come up with:

http://www.valkyrieforum.com/bbs/index.php?topic=71762.0 is a decent thread to get you started on IS audio options, but this thread is several years old. Some things may no longer be available, but there may be updates from them, too. A good audio shop can help you find amplifier and speaker options, as well as custom work. This video is about a complete restoration of an Interstate. At about the 15:08 mark, he starts showing some of the custom audio work he did. The options are out there; you just have to design it. As I said, nobody really makes anything for us anymore as a drop-in kit.
https://www.youtube.com/watch?v=mwfnhDXaz64Performance parts are limited as well. There are no "big bore kits" like there are for some other makes/models. There is a magnacharger out there, but they're scarce and expensive. One of our members here is Bob Smith, AKA The Attic Rat. You'll see his ad periodically here, as he's a site sponsor. He has a performance package for the 1500 that I've not heard one bad word about. 918-720-5444
Another member and site sponsor here, Mark T. designs and sells performance exhaust pipes for our bikes, as well as some other Valk items that are nice to have.
http://www.horseapple.com/Valkyrie/Valk_Products/M2W_Exhaust__System/m2w_exhaust__system.htmlIf you want to ditch the trunk to go for the bagger look, you can customize the brackets to make the trunk a "quick release". Known as a SuperValk. There are videos on Youtube, and here's a link showing the work done to the brackets:
http://bigbf.com/bigbf_shop/mod_i-s_trunk/Good luck with the build. You've chosen a bike that's not as readily modified as others, but maybe that's because it doesn't have to be. It was pretty much the King when it was new, and it still holds it's own many years later.
