What's the problem?

If it is "not enough slack", then you can loosen the riser clamps
and move the handlebars over in the needed direction while you
get the job done.

If you do this, be aware that when you loosen the riser clamps
your handlebars will try to swoop down and put a dent in your
tank, so protect the tanks from that...

I've done this for the throttle cable, I've never changed my choke
cable...

You will have to split open the box on the handle bars to insert the cable end into the choke lever. I fished the wire through the frame and wire hangers first, into the box, then onto the choke lever.  Leave the choke lever loosely assembled in the box on the handle bars. I loosened the brake lever clamp and slid it and the the box up the bars toward the center clamp. That gave me enough slack to insert the bottom cable end into the slide rail by the intake tubes. Reset and tighten everything up top, check for bind-free operation and full choke travel and good to go.
