Carb Jets UK Bike

I am pretty sure that my Valk (1 previous owner) has not had the carbs done prior to me owning it. However, having just stripped them down they have 35 pilot jets but the main jets are 78 and I expected 100s. Are 35 and 78 standard on a UK bike? Does the little star symbol on the main jet give away the fact it's an aftermarket jet or is this a symbol you would find on a OEM jet?
I have a set of 100 main jets in the kit I bought so I guess I should fit them but I am surprised at finding 78s. Any ideas? Thank you.

35 slow and  78 main jets are the original spec'd jets for your bike.
Thats due to the 98HP European limit back when they were new.

Main 100s are much to rich as long as you don't modify the Airbox and the Exhaust to US specification.
My own experience with more than a handful of Valkyries in my shop: the difference between a well dialed in EU 98HP and a 107 USHP is less one may expect by sheer number and you may only experience it for real when driving them back to back.

So don't sweat it. Clean it,  rebuild parts it if needed and most important:  dial it in properly then. Thats more than enough oomph for fun.
