Hi, would appreciate your help:

1) Do the bags remove easily and once removed is there a bracket left on the bike?

2) Any issues for the passenger clearing the bags to use the floorboards?

Thanks!

4 bolts on each bag, can take them off in less than 10 min. Brackets stay on the bike, not easy to remind remove, same bolts that hold the rear fender & hitch on. My wife has no problems, likes the extra room.

As I understand you could just remove the brackets and leave the brackets attached to the bag, no? I guess I'll find out when I get mine in a couple of weeks.

Either way, it's just four more bolts to take the brackets off.

1) Yes, and yes.

The mounts I had from them were milled from heavy bar stock, not cast, and are very heavy duty.  They stay mounted to the bike.

2) Wouldn't think so.  The Jumbo Strongs are a veeeeery wide bag....but they're about the same length as the Strongs, the Mustang bags (Mustang bags are exactly the same as the "Quick Release Strongs")and even the OEM bags.  Your passenger should be able to put their feet on the pegs without any problems.

Keep in mind though that the bags don't come pre-drilled.  You mount the mounts to the bike and then you place the bags where you want them, mark your holes, drill your holes and then mount the bags to the bike.
I can't help about the shape I'm in

But don't ask me what I think of you
I might not give the answer that you want me to

I did the nut cage mod and used 3/8 stainless steel carriage bolts used 2 nuts on each bolt and bought 4 cheap 9/16 sockets and cut to use as my spacers coated inside with anti-seize to keep the rust off and the brackets stay on the bag and remove in seconds will be getting some chrome acorn nuts for a better look.
