Travel Help for East Tn

Hello everyone, planning on a trip from Jackson Tn to Gatlinburg in a few days and would love to have some input from you guys on routes to take. We will be traveling in a Madza Miata and would love to take the scenic routes where possible, all the way from home to Gatlinburg and No interstate if feasible. The trip will be just crusing with the top down and well below the 75 mph on the interstate. I still have my Valk, but am at the age of not able to ride that far on two wheels! Any thoughts from you guys much appreciated....

Us 64 east to Chattanooga then 411 north to Smokies.

US 64 east to Jasper then 28 north to Dunlap then 127 to 30 or 68 east to 411.

411 to 68 east to Cherahola to 129.
