I want to change the tires and was wondering what is the widest low profile tire we can get away with on the rear. Do you have any recommendations for the front tire as well......something that is not so wide, so it will look good with a vtx 1800 front fender.  All this while trying to retain decent handling.

Thanks

A 205 is about the widest I think. That would be a car tire width, in a motorcycle tire it would most likely be a 200.  One problem is the nut cages for the rear fender strut bolts.  They can be and usually are removed to allow for a little more room for a wider tire.

Removing the nut cages don't guarantee  room but does help. Using carriage bolts from the inside also will give a little more room.

One occasional problem is a rear fender that is not centered on the tire adequately. It will encroach on the room in a jiffy. Some say to use washers (I don't know where) to help realign the fender, however I haven't that particular problem so am not exactly sure what's required.

Check "Shop Talk" (link is on main VRCC page).  In there you will see explanations of the nut cage and washer mods (both fairly easy to do).  205 is about the max width before you start rubbing the swingarm.
