I know Jersey has quite a population, and problems, with Blacks. [ Black bears that is]. 700 # is quite an animal !

Here in central/Western NY the Bear population is increasing also.

That is real big! 425 is big around here. Most of the Bears down state (NY) originated from bears released by NJ. 20+ years ago when I moved up here most of the local bears had NJ tags in their ears.

Okay, please enlighten me.   I know bear is edible but, I'm told not very good and pretty greasy.   I suspect that it really depends on how it's prepared.    Just about anything can be tasty if prepared correctly.   

I've got no problem with hunting bears or anything else as long is it consumed.    Have a problem with trophy hunts though.   Just curious and wondering if anyone has any recipes for bear stew or anything else using bear meat as the main ingredient?

I have eaten black bear and grizzly bear. In my opinion black was good, actually a very mild meat and not gamey at all. Brown bear not so good , greasy and strong. I think it has a lot to do with what they have been eating. In AK anyway black bears predominantly eat grasses and berries. The brown bear predominantly eat fish, moose, caribou.

I have had black bear, almost a sweet taste to me. Not gamey at all. I had a big fat bear steak and a burger. Good stuff.

I have had Black Bear in a roast, burger, and saurbraten. Not my favorite. I have helped in gutting a few and the diapers in there gut kind of turn you off. They are carrion eaters also and carry trichinosis. Cook it well.
