My Brother called me before he came up for Christmas and told me that he just bought some Golden beets and wanted to make some pickled eggs with them so off i went to the egg farm.  I have been making eggs for a long time just love them when sitting down watching the game with my favorite beverage. A friend of mine that i worked with a long time introduced to me Quail eggs and i have made them ever since.  When i went to the farm the owner asked me how many i wanted and i said all that you got,so i walked away 165. Now let me tell ya the hardest part of this process in peeling these little Bastards and if ya get lucky it goes like this,  If you are not lucky it turns into a 12 pack sort of job.  But in the end they are great eating

Not much better than pickled eggs and a few brews. JoAnn doesn't much like being around me afterward though.

Looks real tasty. I used to make some pickled quail eggs. At one time I had about 250 female Japanese coturnix quail. There would be about 175 eggs a day in the pens. I couldn't give eggs away fast enough for a while. 5 quail eggs equal one normal chicken egg and I can't taste the difference.
Cotrunix quail can start reproducing at 70 days of age. About the opposite of our great American Bob white breed of quail. I hatched 100 Bob Whites from purchased eggs and never had a single egg from them. Very hard birds to raise.
Bird flu became such a hot topic when I had my quail so one day when a bird dog trainer offer to buy all 400 of my birds I sold them.

Every farmer's bar in Kansas should be required by law to have pickled eggs on the bar, the good ones have pickled pigs feet too. And cold draft beer! Hoser

Hoser  When I was growin up in Northern Illinois and Southern Wisconsin I believe every country bar did in fact have those 2 items on the bar. And some tasty sausage off the grill!  But pickled eggs some sausage and ice cold draft brewski-while a good meal I did NOT want to be around myself the next morning!  RIDE SAFE.

most of the stores where i grew up in TX. had pickled eggs and pigs feet on the counter, cost 25 cents each,,buy a couple on the way home about 3pm and when dinner was served at 6pm i could rum mom and dad off from the table and have all kinds of food to myself,, of course that only happened twice and then was told if i farted around either of then again i would get a butt beating,,

I would throw some beet juice in when I would pickle eggs. Does not change the taste, but makes them pink!

I use to eat Penrose pickled eggs a lot....bought the gallon jugs of them finally......the small jars only had 5 eggs in them and sometimes I'd eat all 5 at a time........unfortunately, they don't make them anymore......and the Hannah brand, among others, just don't taste the same.......Mama tried making them when I was young....they were never as good as Penrose

There used to me a country store near me that was ran by an older lady.
Every fall she would make pickled eggs to sell in her store, they were always REALLY good.
Several of those eggs and a hunk of country cheese and you had a feast fit for a king.
