Just purchased a 1999 Valkyrie ( tourer?) I say that because the only information I've been able to find on the web says that my bikes paint sceam ( Phoenix Orange and Black ) was used on a 99 standard, yet, my bike comes with hard saddlebags and a windshield. The bags are painted same as the bike. I just dropped $1600 on a new set of tires, fork seal, a carb rebuild. I don't have the owners manual and was trying to figure out what the orange "S" light was on the tachometer. I noticed it was on when I road the bike home from the shop yesterday.

I think it is to indicate your kickstand is down.

"S" Light is "Sidestand"
I defeated that switch on my bikes.

Tourers have windscreens & hard bags.

You can tell what model you have by the VIN  cooldude

I believe that color scheme was only offered in the standard. But someone could have easily added the bags.

If the VIN tag on the frame - front of tank on left - is intact, the model is shown in the lower left corner: GL1500C = standard, GL1500CT = tourer, GL1500CF = interstate.
