So, if the container said 90-93% cheese it would be OK ?

We grate our own too.

I think we would be surprised if we knew just exactly what we are really eating regarding most products.

I have a container of RACCONTO brand grated in my fridge.

This does have cellulose to prevent caking listed in the ingredients. It's listed 2nd to last so not a large percentage.

Haven't used it in months. Just tasted some and I know why I haven't used it. Pretty tasteless.

The cheese that is in there is 100% real parmesan cheese.  Doesn't mean that the contents of the container is 100% cheese, though.  Could be 70% and 30% of the cellulose.  But the 70% that is cheese, is 100% parmesan cheese and not 10% provolone and 15% white american (all cheese matters).

Learned that in a nutrition course I had to take.  Their example was hot dogs.  They can advertise 100% beef hot dogs as long as the protein portion of the hot dog only contained beef (no pork, chicken, fish, legumes, etc.)  But the the entire hot dog may be made up of half beef and half fillers.  So 100% of 50% of the ingredients in the hot dog is beef.

Tammy loves my Alfredo. Wether chicken, smoked chicken, shrimp, mushroom, whatever.
She gets the whole run, (except for two of the secretarys at work), cause I don't like parmesian.
I do get the good stuff at Costco and grate it myself though.
Cellulose fibers are for beavers. (bonus double entendre' there)
