Temperature Light

Probably a stupid question, but when should this light come on? The reason I am asking is I have never seen this indicator light up. I am not sure if everything good, the bulb is burned out, or something else.  So I guess the question is if there is an easy way to check this light for proper function or if I have to pull stuff apart to test it?

Here's what I think: if your fan comes on when you're stopped at a traffic light in the summer (but
not many other places), and if your radiator fluid is between the marks on your overflow bottle (see
the manual to ensure you're checking it right), you don't want to see the temp light come on... I
don't think I ever saw mine come on.

The thermostatic switch relay will close at a temp range of 234-244 degrees F causing the coolant temperature light to illuminate.

If I remember correctly, on a Standard the light should come on for a few seconds when turning the ignition on.

That's correct.  You should see it come on for two seconds every time you start your bike.  Could be several things if it's not coming on.  Check the Boiled Ballz post on this page for what worked for me.
