How do I adjust it?

I read somewhere that it is not adjustable. Several companies make lowered pegs that will aid in giving you more room for your upshifts, kuryakyn was one of those, they also make a heel toe shifter for the GL 1800 which will Mount to this and also help with that problem.
  The good news is you will not sacrifice any cornering clearance with the lowered pegs as they don't come any lower than the bottom of the feelers on your stock pegs currently.

Got a link? I spent some time doing an internet search but got nothing. Spoke to J&P Cycles they said they don't have anything. Did the search on Kuryakyn and haven't been able to see anything.

No, I do not have a specific link. I will do some research for you see what I can come up with. The heel toe shifter was for the earlier model GL1800s Gold Wings, they will fit the f6C. I've seen them on ebay recently,  but they did not have black. I will have to Powder Coat.

  Here's one, these are nice. I used them on sport bikes.
I prefer the Honda shape and style with the rubber for the Valkyrie.

I like the mini boards, they give you ample room and don't look "Wingish" They also give you the drop you are looking for. That AND the heal toe and you've got some options to try out.

I have these Kury Mini Boards with the comfort drop on my F6B. I have them tilted one click forward and there is plenty of room for my foot to get under the shifter. Should work on the Valkyrie since it and the "6" are basically the same except for the fairing and saddle bags.

If this is the same lever assy used on the 01-17 Goldwing , check out DHS Racing. He has a kit to make the lever adjustable and take a lot of the slop out of the assy.

Looks like they will be helpful for anyone with shifting issues on this bike, whether it's a big feet issue, style of boot issue. My friend has an 1800 as well, he has a left lifted shoe for medical reasons. Simply cannot shift it. I suggested he try the mini boards due to the drop and added flexibility with the angle to get the larger lifted shoe under the shifter. He is currently trying the GL1800 heal-toe shifter. Maybe both would be a good solution. It may be more comfortable for anyone.

Is the angle on your boards adjustable? Mine are simply a mini board peg drop, yours appear to have more angle.

There are 3 main positions. Front, rear and center.

These are in turn adjustable in a 360 degree circle with stops at about every 45 degrees.
