Installing the bags backwards and using the unobtainium scuff shields as skid plates is sacrilegious, in my opinion. Maybe he could add a trailer hitch and get a spark show to go with that display.

lol I didnt even realize the saddle bags were backwords, thanks for pointing that out. I was totally thinking of trying that but now i have a reason to not kill myself

Don't over assume what someone else might do.  Among the injuries that landed me some three weeks in critical care was a C1 fracture.  My wife was told that were it not for the half shell helmet that wouldn't have happened.  I still wear a half shell.

As for protection, my guess is that his control skills protect him better than does a protective jacket on a less skilled rider.

Truthfully there's nothing you can do that will protect you adequately from every dangerous possibility.  We all make our own choices.  If you ride a motorcycle in traffic you hold no ground to criticize someone else's choices regarding protection from possible danger.

    I wonder what kind of mechanical mods he did to the bike, if any.    Looks like it runs like gangbusters.

And does the wheelies using only body english too on a heavy Valk. this guy uses the backrest for leverage, here (Kaplan, who advertises Valks and other bikes for sale on Youtube if you ever came across his videos. Didn't know he could ride like that.)

Doesn't wheelies damage the steering bearings slamming the front wheel down like that? Then bad steering bearings causes death wobbles.
